Black Mustard – Seeds for spicy Microgreens and sprouts
For all lovers of sharp and distinctive flavours, we bring black mustard seeds. These unobtrusive, dark brown to black seeds with a diameter of barely 1 mm hide incredible strength and pungency. Their sprouts are significantly sharper than those of white mustard and will become the perfect ingredient for seasoning spicy dishes, salads and sandwiches.
Nutritional power and health benefits
Black mustard sprouts are not just about taste, but also about health. They are rich in proteins, carbohydrates and contain a wide range of valuable substances:
- Vitamins: A, B (especially B2) and C.
- Minerals: Calcium, iron and phosphorus.
- Other substances: Fibre, saponins, flavonoids, plant hormones and phytoncides with bactericidal properties.
Regular consumption of these sprouts supports blood circulation, may help against muscle pain, ease fever and a feeling of cold. The contained substances also positively regulate the functioning of the entire organism.
Versatile use in the kitchen
Thanks to their distinctive mustard flavour, these microgreens and sprouts are suitable wherever you want to add a kick to a dish. They are great in all kinds of salads, spreads, fresh cheeses, as a garnish for canapés, in soups, stuffings or as a base for spicy pesto.
Growing and important tips
Growing black mustard is rewarding and it grows well both hydroponically and in substrate. Germination is also easier than with white mustard, because the seeds release much less mucus.
- Soaking: Soak the seeds overnight in water.
- Rinsing: Rinse 2-3 times a day during germination. In the first few days, the seeds may smell slightly - more frequent rinsing will remove this phenomenon.
- Germination time (sprouts): The sprouts are ready for consumption in 5-6 days.
- Growing time (microgreens): Germinate in the dark for 2-3 days, then in the light. Harvest between day 7 and 12.
- IMPORTANT NOTICE: Mustard is sensitive to higher temperatures and direct sunlight, when it can easily spoil. During hot summer months, keep a close eye on it, or leave its cultivation for the cooler part of the year.
Note for growers:
During germination, the roots create fine hairs that may at first glance resemble mould. Do not be alarmed; this is a natural phenomenon that disappears after rooting. The plants are rather smaller and after rooting we no longer recommend misting them from above, so that they do not start to rot.
